Cashew Cream
Description
This recipe makes more than you will need for my Cauliflower Casserole. Use the leftover cream as a savory spread on toast.

Ingredients
- 2 cups boiling water
- 1 cup roasted cashews, unsalted
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1/4 teaspoon table salt
- 1/4 cup water
Instructions
- Place cashews in a heatproof vessel and cover with boiling water. Allow to soak for 30 minutes.
- Drain cashews and place in a blender or food processor with a blade along with vinegar, lemon juice, salt, and 1/4 cup water.
- Blend until smooth.
