Ingredients

  • 4 eggs (separated)
  • 1/2 cup mayonnaise
  • 3 tablespoons water
  • 2 tablespoons butter
  • 1 cup cheese (shredded)

Instructions

  1. Beat egg whites until stiff, soft peaks.
  2. Beat egg yolks until thick and lemon colored, beat in mayonnaise and water.
  3. Fold in egg whites.
  4. Melt butter in 10 inch skillet, add egg mixture.
  5. Cook over low heat 10 minutes until lightly browned on bottom but still moist on top.
  6. Bake at 350 degrees for 5 minutes.
  7. Sprinkle cheese on top.
  8. Bake 1 to 2 minutes longer or until cheese melts.
  9. Loosen edges, make shallow cut through center; fold in half and serve.
